• 1 large red onion
  • 4 - 5 ripe Roma tomatoes
  • 1 bunch of fresh cilantro
  • 2 fresh Jalapenos
  • 1 - 2 fresh limes

Cut the ends off the tomatoes, slice in half and seed, then dice into small bits. Dice the onion into pieces about the same size as the tomato dice. Chop the Cilantro until it is no longer ‘leafy’ . You don’t want it too small but you don’t want it to be recognizable as a leaf. Seed and chop the Jalepenos into a dice similar to the tomato and onion. Place all the ingredients in a medium bowl and squeeze the juice of 1 large or two small limes over and stir to coat. Let rest in the refrigerator for about an hour.
