8 extra large eggs
2 cups chopped tomatoes (slightly seeded, no need for perfection)
1/4 Cup Fresh basil chopped
1 cup Fresh Mozzarella cut in cubes
dash of heavy cream
Coconut oil or butter to grease dish
salt and pepper to taste
Grease a pie plate with a generous amount of your chosen oil
Preheat your oven to 350 degrees
Beat the eggs with the cream and salt/pepper just til foamy
Place tomatoes and basil in the bottom of the prepared pie pan, sprinkle with the cheese then pour the eggs over and bake for 25 – 30 minutes or until the center is set.
*Note: It may be easier for you to place the pie pan on the rack just before pouring the eggs over as it will fill the pie pan to the very edge.
*This will rise a great deal but then sink a bit as it cools, this is normal.
